Steamed Cod with Vegetables

Makes 4 servings

Ingredients:

16 stalks asparagus, cut in half crosswise
1/4 lb snow peas or green beans
1 zucchini, sliced 1/4" lengthwise
1 red pepper chopped
1/4 teaspoon tarragon (or any favorite herb)
1/4 teaspoon parsley
pepper to taste
Four,  8-ounce cod fillets
1/4 cup lemon juice or dry white wine
2 tablespoons olive oil

Tear off four 15 inch long sheets of foil.  Pile one-fourth of the vegetables in the center of each sheet of foil. Sprinkle the vegetables with the herbs and season with pepper.

Set a cod fillet on each mound of vegetables and season with pepper. Top each with 1 tablespoon of the wine or lemon juice.  Fold up the foil edges and seal.

Bring 1 inch of water to a boil in a large pot fitted with a steam basket (or metal colander).  Cover and steam for 15 minutes.  Remove and let rest for 5 minutes.  Open packages, and transfer fish, vegetables and any juices to a plate.

Each serving: 279 calories, 7.2 gm total fat, 8 gm carbohydrates
